Pesto Chicken Penne
A pesto sauce mix makes putting this recipe together a snap. Although it's an easy recipe it seems very elegant and would be great served for company.
Ingredients:
8 ounces penne pasta or any medium pasta
1 envelope pesto sauce mix
¾ cup milk
¼ cup olive oil or vegetable oil
2 cups cubed cooked chicken or turkey
Shredded parmesan cheese
Cook the pasta according to the package directions.
While the pasta is cooking, whisk together the pesto mix, milk and oil in a large saucepan. Cook and stir until mixture boils. Reduce heat and simmer, uncovered for 5 minutes.
Add the chicken and heat through.
Drain pasta. Add to sauce mixture and toss to coat. Sprinkle with the parmesan cheese.
To round out this meal, serve with a fresh, crisp green salad and warmed French bread. That's all it takes to put together this quick dinner recipe and make it a complete meal worth of company.
Artichoke Tuna Medley
Don't let the name fool you, this is a unique dish that is surprisingly scrumptious. It goes together quickly and is a nice change of pace.
Ingredients:
3 ½ cups water
¼ cup butter or margarine
2 packages (4.6 ounces each) garlic and olive oil vermicelli mix
1 can (16 ounces) artichoke hearts, drained and quartered
2 cans (6 ounces each) tuna, drained and flaked
1 package (10 ounces) frozen peas
1 tablespoon olive or vegetable oil
1 tablespoon cider or red wine vinegar
4 to 6 garlic cloves, minced
Bring water and butter to a boil in a large saucepan. Stir in the vermicelli mix including the seasoning and the rest of the listed ingredients. Bring back up to a boil; cook, uncovered, for 8 to 10 minutes. Let stand 5 minutes before serving.
This quick dinner recipe is complete with the addition of a salad and your favorite dressing.

There comes a time in the life of a busy multi-sport athlete (and especially the longer, time-crunched, endurance athlete) when you must eat, it must be a complete meal, and it must be quick.
You see, your body can only support high volume training, proper performance, and immune system health for a limited period of time if all your quick meals consist of microwaved Lean Cuisines, gas station trail mix, and even "all-organic" food bars. You'll eventually crash. So you have to make a habit of regularly eating fast healthy meals and wholesome foods without heavy amounts of preservatives, salts, sweeteners, and synthetic chemicals, and you have to figure out how to do it without huge sacrifices of time and preparation.
On that note, I'm going to share with you my top ten meals that I rely on in a pinch. That is, when I've finished a long ride and have to be at work in 10 minutes, when I've gotten home from the gym and need to be asleep within an hour, or when I have just a few moments to make a dish to fuel a workout.
Each meal includes a complete blend of protein and carbohydrate for recovery and energy needs, and while none of these fast healthy meals are as tasty as filet mignon, lobster ravioli, or a fully-loaded chopped vegetable salad, they will fulfill the physiological needs of the busy multi-sport athlete. And since many endurance athletes must consume in excess of 5000 calories per day, here is the added bonus: these are relatively cheap eats with ingredients that are budget-friendly.
In no particular order, here are the top 10 meals that I personally make and have committed to memory as my complete fall-back nutritional options. Hell, some of them don't even have a name, so I had to make up a title on the fly while writing this article. And if you're wondering how you can ask me questions about these meals, see the snippet at the end of this article, along with a bonus Paleo meal.
10. Mediterranean Surprise: use some whole wheat noodles, quinoa noodles, orzo style pasta, rice or really, whatever. I pretty much grab whatever type of pasta is in the pantry for this one. Prepare the pasta. When it is finished, stir in a small handful of feta cheese, a tablespoon of extra virgin olive oil, a handful of raisins, a handful of almonds, and parsley/salt/pepper to taste. As a tasty bonus, you can throw some capers and garlic in. You can make a bunch of this and eat it all week, and if you're making it right after a workout, you can take your shower while the pasta cooks.
9. Turkey/Avocado Grilled Sandwich. Quick, fire up a pan drizzled with olive oil or butter. Put the bread on the pan and put the turkey on the bread. While all that grills to a nice toasty texture, slice one avocado and have it ready to slap on the sandwich and pack away or eat immediately. I also include sliced tomatoes and alfalfa sprouts on this one.
8. Soup. I call it soup. My wife calls it heated up vegetables with water on top. Whatever. Put a handful of broccoli, cauliflower, carrots, and spinach into a pot. For protein, also included cubed tofu (easy to find at grocery store produce section). Pour 1/2 cup water over the vegetables and tofu, and then heat for 8-10 minutes. Stir in salt, pepper, a bit of chicken bullion if you desire, then eat with a spoon straight out of the pot. Or pour it in a bowl if you have time to kill.
7. Dinner Burrito. Just because everyone else calls it a breakfast burrito shall I deem this a dinner burrito. Scramble 2 eggs with 2 tablespoons yogurt or cottage cheese, 1 handful spinach and 1 chopped tomato. Salt and pepper to taste, and then shovel onto a whole wheat tortilla. Sprinkle with cheddar cheese and consume.
6. Zucchini Pancakes. In a blender or food processor, blend 1 chopped zucchini, a handful of sliced red onion, a handful of whole wheat pancake mix, 1 egg, 1 tablespoon olive oil, and 1 handful parmesan cheese. Pour this mixture onto a grill and make pancakes with it (duh, pour it in a pan and grill 4-5 minutes/side). Season with ketchup. Organic ketchup.
5. Tapas. Lovely little appetizers all put together make a complete meal. I slice 1 tomato and drizzle with olive oil, sea salt, and parsley. I slice one pear or apple and sprinkle with gorgonzola cheese (or any cheese, really). I cover one handful of walnuts with honey and cinnamon. I eat it all, nicely arranged on a plate, or napkin.
4. Big Chef Salad. While 1-2 eggs are boiling, mix onto a bowl or plate two handfuls mixed greens, 2 sliced vegetables of choice, 1 handful raisins, 1 handful walnuts, and a small drizzling of olive oil and vinaigrette. Slice the egg and throw it on top, then salt and pepper to taste. If you need more carbs, crumble whole grain crackers for croutons.
3. Mexican Delight. It's like the Mediterranean Surprise, but a delight is somewhat different than a surpriseĹ right? Use quick 10 minute brown rice. Just as it is finishing stir in black beans, salt, pepper, and any other creative items from the fridge such as olives or leftover salsa. If I'm not showering while the rice is cooking, I throw 1 chicken breast into a pan, and sprinkle with curry or turmeric (which I guess makes it an Indian Delight) and add that as well. Yum?
2. Power Oatmeal. My favorite, bar none. To one bowl of raw oats, I add 1 tablespoon almond butter, 1 tablespoon yogurt or coconut milk, 1 sliced banana, 1 egg and 1 sprinkling of cinnamon. Also 1-2 scoops whey protein powder if it's handy. Pour boiling water on top and microwave on high for 60 seconds, or just mix everything together on the stovetop. Warning: very calorically dense and should be consumed 2 hours prior to or immediately after a workout.
1. Reese's Peanut Butter Cup. My signature dessert. Use a small half bowl of plain, fat-free yogurt or coconut milk. Add 1 tablespoon peanut or almond butter and 1 tablespoon dark chocolate pieces or cocoa mix. Close your eyes and imagine you just took it out of that little orange wrapper. For added calories, add 1-2 scoops of protein powder (will make it a very "mousey" texture).
Disclaimer: your spouse and children may not share any affinity for these meals.
BONUS PALEO MEAL: If you're one of those caveman style Paleo folks, then try this in-a-pinch Paleo meal: grab any meat you can get your hands on, like a chicken breast, slab of grass-fed beef, or fillet o' fish, throw it onto a bed on spinach, and drench the whole mixture in olive oil, balsamic vinegrette, salt, pepper, and if desired, a bunch of chopped sweet potatoes or yams that you let cook while you were working out.

We all have days where we don't have much time to cook, and then it can be a challenge to still provide healthy and tasty food for our loved ones. I love using my recipe books and trying new recipes, but I figured out that cooking with a recipe takes more time. When I'm in a hurry, then I'm simply faster without using a recipe because this saves me the time of reading and memorizing the recipe, or going back at times to check what to do next.
So, I've developed a few very basic recipes that I can easily remember and adapt in any way I need. When I'm in a hurry, then all I do is open my fridge or check my pantry, grab some vegetables or cans and throw a nice healthy meal together within half an hour. No need to follow a complicated or long written recipe.
Here are 2 of my secret cook-in-a-hurry recipes. Both make four servings and are quick and easy to make, especially the pasta
Basic recipe #1: Vegetarian Stew
Use foods that only have a short cooking time and are quick to prepare, for example marrows, aubergines, mushrooms, tomatoes. You can also use canned or frozen vegetables which will make it even quicker.
Ingredients

  • 2 tbsp. oil
  • 1 onion, chopped
  • 1,5 kg mixed vegetables, cut into small pieces or thin slices
  • 250-500 ml water or vegetable stock
  • 300 g starchy foods (rice, pasta, potatoes, couscous) or 4 rolls

Steps
Cooking the vegetables:

  1. Heat the oil in a large pot and fry the onions until golden.
  2. Add the vegetables and half of the water.
  3. Cover and allow simmering for about 15-20 minutes until the veggies are done.
  4. Season with your favourite spices and serve.

Starchy foods:

  • If you are using rice, start cooking it before cooking the vegetables.
  • When cooking pasta, start after adding the water in step 2.
  • Potatoes can be added with the other vegetables in step 2.
  • Couscous can be prepared about 5 minutes before the vegetables are done.
  • If you decided on rolls, simply serve them with the vegetables

Basic recipe #2: Pasta with Tomato and Mixed Vegetable Sauce
Ingredients

  • 300 g pasta
  • 2 tbsp. oil
  • 1 onion, chopped
  • 4 cans of various vegetables, e.g. 2 cans of peeled chopped tomatoes and 2 of mushrooms (add peeled tomatoes and baked beans with the sauce, but drain all other vegetables)
  • 50 g grated cheese

Steps

  1. Start cooking the pasta.
  2. Heat the oil in a large pan and fry the onions until golden. Add the canned veggies, mix well and warm it until everything is hot.
  3. Season, sprinkle with cheese and serve with the pasta.

As you can see, these recipes are very basic and can be prepared with nearly everything you find at home. They allow you to create a wide variety of different meals, so you could use one of these recipes seven times without eating the same food every day. That's what makes them so great. You don't even have to think a minute about what to cook, you just decide on one of your basic recipes, grab some ingredients and go. Half an hour later, dinner is ready.

Like many people learning the culinary arts, I started by trying to cook something on a range top. What I did not realize is that cooking also involved no heat at all.
The most common would be salads. Now don't get me wrong there are some salads that are served warm or hot, but that is for another time.
You can also prepare certain types of fish using citric juices such as Lemons, Limes or Oranges. This type of cooking relies on the fruit juice acids to do the cooking. Some of the fish types that do well with this method of cooking are Cod, Tuna, Salmon, Orange Roughy, White Fish or any type of fish that gets flakey when cooked using heat. Other ingredients that do well are shrimp, calamari, pre-cooked octopus, cucumbers, thinly sliced carrots, onions, tomatoes and yes even lobster. Actually most any vegetable you might like can be an ingredient in this cooking method. You can also enjoy a good old fashion tuna salad with chopped pickles and onion mixed with mayonnaise; salmon can also be substituted for the tuna.
With the introduction and widespread use of pre-cooked meats the boundaries are opened up even further.
Sliced deli meats are great not only for subs and sandwiches but can be filled with herbed cream cheese, thinly sliced veggies, hard chunk cheeses or soft cheeses for that matter. Pre-cooked beef roasts, pork, chicken, smoked turkey, ham or chickens are also very handy to have around. Use larger pre-cooked meats chopped or cubed into salads or if you like to slice your own deli style cuts for rolls or sandwiches.
Fruits and vegetables are also easy to use without having to cook. Cut your own fruit and make your own fruit salads. You can add a little sugar or a sweet wine to the mix. You can even finely grate parmesan or pecorino or any mild hard cheese and sprinkle over the top of your fruit mix.
Veggie platters are quick and easy with your favorite dip. You can even thinly slice or julienne carrots, celery cucumbers, lettuce or cabbage and use spring roll sheets and make your own spring rolls and you can drizzle an oil vingerette over the top or on the inside.
Of course you can take full advantage of modern conveniences and for dessert make up some instant puddings or add whipped cream to your made pudding and pour it into a pre-baked pie crust and voila, cream pie.
If you would like an appetizer, set a package of flour tortillas out until they reach room temperature and soften cream cheese or cheese spread and spread a thin layer on one side of the tortilla then layer sliced meats or thinly sliced veggies and/or cheese then roll tightly and slice into ¼ inch disks and there you have a delicious and quick finger food.
Salsas can also be made without heat or you can make your own avocado quacamole, add a few chips and it's snack time.
Remember you are only limited by your imagination when it comes to cooking even cooking without heat.

  • 1/2 teaspoon chili powder
  • 2/3 cup canned kidney beans, drained and rinsed
  • 1/4 teaspoon salt
  • 1/2 teaspoon chicken bouillon granules
How to make it:
Saute the garlic and onion for a few minutes in the oil in a skillet. Add the bell peppers and saute for two minutes. Add the tomato puree, chili powder, water, salt, cayenne pepper, and chicken bouillon granules.
Bring the mixture to a boil. Turn the heat down and simmer it for five minutes uncovered. Add the beans, chicken, and rice and warm them through. Sprinkle the cheese over the top and serve.

Simply poke some holes in the breasts and cover them with the dressing and leave them in a flat baking dish in the fridge to marinate.
When you get home at night, simply roll the breasts in a mixture of flour, grated parmesan cheese out of the can, and Italian bread crumbs, and then place them on a tray or in a shallow pan and bake them in the oven for about half an hour.
While they are getting tasty in the oven, prepare a nice salad using bagged lettuce and some tomatoes and cucumbers and put one of those steam-in-the-bag bags of broccoli or green beans in the microwave and season them with some butter and salt and pepper.
In half an hour, you have a delicious, quick, easy chicken recipe that the whole family can enjoy around the table.

8 oz. package noodles
Place vegetables in crock pot. Add chicken. Pour in broth and water. Add dill and parsley. Cover and cook on low 8 hours. Remove vegetables and chicken from crockpot. Add noodles, turn to high and heat while you shred the chicken. Return chicken to pot and heat through. Cook for about 20 minutes, or until noodles are done.
Super Simple and Healthy Beef Stew
1-1/2 lbs. beef stew meat
4 medium red potatoes, cut into pieces
1/3 cup flour
salt and pepper to taste
14 oz. can diced tomatoes, un-drained
2 cups water
3 cups frozen mixed vegetables
Place potatoes in bottom of crock pot. Coat beef with mixture of flour, salt and pepper. Place meat in slow cooker. Add un-drained tomatoes and water and stir well. Cover slow cooker and cook on low for 8-10 hours. Add frozen vegetables and cook on low for 30 minutes until vegetables are tender.
The health advantages of cooking with a slow cooker are obvious, but make sure to read your recipes well so you know that you're getting a healthy recipe that your family will enjoy.

You can add some lemon juice or cream of tartar to the whites to help the stiffening process. Fold the egg whites into the rest of the mixture using a wide, flat spoon. This helps to keep the air bubbles in the mixture.
You should use a large dish to allow the batter to rise and expand. Serve it as soon as it is cooked, because this dish deflates as it cools down.
Recipe for Slow Cooker Spinach Souffle
This recipe is extremely simple and you just need to combine the ingredients and add them to a lightly buttered crock pot. Your crockpot needs to have at least a three and a half quart capacity. If you have a souffle dish and a big crockpot, you can use the dish in the crockpot. The cooking time varies from two to three hours but you will be able to see when the souffle has risen.
What you will need:

  • 1/4 cup grated onion
  • 2 beaten eggs
  • 1/8 teaspoon nutmeg
  • 2 lbs thawed, drained spinach
  • 8 oz cream cheese, at room temperature
  • 1/4 teaspoon black pepper

How to make it:

4 boneless chicken breasts, pounded to 1/2 inch (1.5 cm) thickness
1 egg
1/2 cup milk
seasoned bread crumbs
2-3 tablespoons olive oil
8 slices mozzarella cheese, or more if you like
1 jar (16 oz) spaghetti sauce tomato base
Or
1 jar (16 oz) spaghetti sauce pepper base

1 jar (16 oz) spaghetti sauce 4 cheeses
1/4 cup Parmesan cheese
Whisk together egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs.
Heat olive oil in large skillet over medium-high heat. Brown the chicken breasts in hot oil on both sides until golden. It will take about 3 to 4 minutes on each side.
Set chicken breasts in a casserole dish. Slice 8 pieces of mozzarella cheese and put two on each chicken breast.
Pour 1 jar of your preferable spaghetti sauce for this evening over the whole dish.
Sprinkle with Parmesan cheese and a little more mozzarella. Bake at 350F (180C) for about 25 to 30 minutes, or until bubbly.
Serve with any type of pasta you like, garlic bread and/or nice green salad.

1 medium head Romaine lettuce
Freshly ground pepper
1/4 cup Parmesan cheese
1 cup croutons
Caesar Dressing
Directions
Mash with a fork in a shallow bowl, the following: 1/4 teaspoon prepared mustard sauce, 6 anchovy fillets and 1/8 teaspoon Worcestershire sauce. Stir in 2 tablespoons lemon juice and 1/3 cup olive oil.
Tear washed and dried Romaine into pieces and place in salad bowl. Pour over dressing and toss lightly. Add Parmesan cheese, pepper and croutons.

2 slices bread of choice (cut crust and cube)

1/2 red pepper, julienned & roasted
1 cup grated Monterey Jack cheese
Tortilla chips for garnish
2 plum tomatoes
1/4 cup pinon nuts
1/4 cup olive oil
1 tablespoon garlic, chopped
4 bunches fresh basil
1/4 cup lemon juice
3 anchovy strips (or as desired)
1/2 cup grated Parmesan cheese
12 oz. Beef fillet (must be all 1 piece)
1 tablespoon chili powder
1 tablespoon granulated garlic
1/2 tablespoon ground cumin
1/2 tablespoon ground coriander
Pinch white pepper
Directions
Combine chili powder, granulated garlic, cumin, coriander and white pepper; coat the tenderloin with the spice mixture. Coating should be about 1/8 inch thick. Roast for 15-20 minutes until medium. Allow meat to cool.
Meanwhile, combine pinon nuts, garlic, basil, lemon juice, anchovies and Parmesan in a food processor. Continue to process while adding the olive oil in a slow drizzle. Use a feed tube if possible. If the mixture is too thick, add a bit of warm water or lemon juice.
Cut the lettuce across the leaves as for a standard Caesar salad, and toss it with the dressing. Put on plates, top with shredded cheese and place 3 to 4 strips of meat per serving atop the salad. Garnish with tortilla chips, quartered tomatoes, the red pepper strips and a dollop of dressing on each meat strip.

When you diet using Medifast, you get to enjoy a healthy lean & green meal that you make for yourself each day when you follow the 5 and 1 plan. Most Medifast dieters usually opt to have their Lean & Green meal at dinnertime and I always did the same. In fact, I found that I had the best results by sticking to just a few basic menus while I was dieting. It kept me from worrying about what I was going to eat every day and so it kept me from thinking about cheating. So here are some quick and easy lean & green menu ideas to help keep your Medifast diet on track.
Chicken Caesar Salad
I lost over 60 lbs on Medifast, and I did it eating chicken Caesar salad about three or four nights per week. It was a quick and easy dinner option that I could put together in about five minutes. Since it was so quick, I didn't mind cooking separate meals for my family because I knew I wasn't going to spend all night in the kitchen.
To prepare my dinner, I usually used pre-washed bags of romaine lettuce or I would pick up some Dole Caesar Salad Kits when they were on sale. You can cook your own chicken breast and dice it up, or you can do what I did -- buy packaged grilled chicken strips.
For variety, I usually added some sun-dried tomato and occasionally mushrooms. Or if I had some bagged spinach, I'd mix my romaine lettuce with the spinach. You'll be having a full two cups of salad greens so mix them how you like. Just remember to leave off the croutons!
Asian Stir Fry
You can enjoy lots of stir fries for your Lean & Green meal and it can help keep things interesting because you can easily swap out the type of protein you use and the various types of vegetables. For oil, you can use a small amount of olive oil or try some sesame oil. If you use a non-stick pan, a little oil goes a long way.
My favorite veggies are broccoli, green beans and some pepper and onion strips. Mushrooms always go into the mix too. Oh, and don't forget the garlic! Once you heat the oil up, you are going to add your vegetables and stir them constantly. They are done when the colors turn bright. Then add either diced and cooked chicken or shrimp and stir fry for another minute or two and pass it all onto your plate. You won't even miss the rice!
Grilled Steak and Roasted Asparagus
I love steak and asparagus together, so this is another lean and green meal staple for me. For my steak, I use my George Foreman grill. I don't like to use a lot of the regular marinades sold at the supermarket because so many of them have sugar in them. Instead, I use a beer marinade. One can or bottle of beer, combined with some crushed garlic and some ground pepper and maybe a tablespoon of olive oil will make your meat moist and tasty while adding negligible calories. The alcohol burns itself off during cooking so you don't need to worry about that either.
For the roasted asparagus, I spread out my asparagus in a baking dish then drizzle it with either one tablespoon or olive oil or a tablespoon of low fat dressing (either Italian or Caesar). Then I toss the asparagus until they are all evenly covered and lie them out flat again. Grind some black pepper over them in stick in a 350 F degree oven for 10-15 minutes, depending on how crispy you like them.
So there you have, my three main staple menus for my lean and green meals on Medifast. All of them are quick and easy to throw together and hopefully you family will also enjoy eating them with you occasionally.

Concerts in the park are a great source of cheap family entertainment in the summer. Choices range from the local high school band concerts to full scale professional artists performing on local outdoor venues. In our area a local winery hosts great outdoor concerts that are enjoyable for all ages. Check your community newspaper and event pages for local events, times and schedules. Plan some easy dinner recipes and pack up a delicious family feast. It's a great way to reconnect with neighbors and friends you don't see that often and the music and entertainment are great too. They are great concerts to take the kids to, because they can play on the grass if they get bored. Try to station yourself near the playground equipment so you can keep an eye on the kids and an ear on the concert at the same time.
In this picnic, I've planned a pan bagnat, a French tuna sandwich that is delicious and perfect for picnics and outings. This easy dinner recipe comes together in minutes, but will hold for hours in a cooler and only gets better as the flavors meld. Bring some crostini and olive tapenade or hummus for spreading as a great easy appetizer. Cold crunchy pickles or green olives or kalamatas would be delicious too.
What to bring:
1) Folding chairs
2) Jackets
3) Beverages! A chardonnay would be lovely the pan bagnat, or if you prefer a red, try a merlot or a pinot noir. Bring juices for the kids and plenty of water, especially if it is a sunny day.
4) Sunscreen - a must for summertime whether it is sunny or not. Sometimes those cooler days can surprise you with a sun burn.
5) Bug spray - after the sun begins to set, the mosquitoes may come looking for you.
6) A plastic tarp in case it rains or the ground is wet.
Easy Recipes:
Pain Bagnat
This is a French style tuna sandwich. I love it for a quick summer dinner. It is also great to make ahead - it only gets better. It is wonderful to take to a picnic, because there is no mayonnaise.
Serves 4
Ingredients
1 lb French bread loaf about 14 inches long
2 Can Tuna - 6 oz - preferably in oil
1/4 C Olive oil
1/2 C Basil - fresh
2 ea Tomatoes, chopped
1/2 C Kalamata olives, chopped
1/4 C Capers, rinsed
Instructions
Slice the bread in half horizontally. Brush the bread with olive oil and layer with basil leaves. Open the tuna, but do not drain it. (If using tuna in water instead of oil, drain and add 2 TB olive oil). Combine remaining ingredients and layer into the sandwich. Wrap very well in plastic wrap and press down hard with a skillet. This gets the juicy goodness into the bread. Some have suggested sitting on the sandwich, but we will not go there. Now if you are taking this sandwich somewhere it is ready to go, remember to pack a knife to cut it. Otherwise, you can unwrap and slice to serve immediately. This sandwich is great made in the morning for a quick grab on your way out to the ballpark. Enjoy!
Easy Three Bean Salad
Great accompaniment to any meal. Will stay in the refrigerator for up to one week in a tight lidded container.
Serves 8
Ingredients
1 Can Kidney beans - 15 oz, rinsed and drained
1 Can Black beans - 15 oz, drained and rinsed
1 Can Chickpeas - 15 oz, drained and rinsed
1/2 C Parsley - fresh, chopped
1/4 C Olive oil
1/4 C Balsamic vinegar
Instructions
Combine all ingredients and toss. Cover and chill.

When time is short and I'm looking for something quick and easy to make for dinner, my mind naturally gravitates towards simple ground beef recipes with just a few easy-to-find ingredients that might already be in the pantry.
Ground beef is so versatile. (And if it's a concern, organic and/or grass fed ground beef are getting easier to find.) (Ground turkey can be substituted for the beef in most all these recipes too. The key to easy healthy balanced eating is figuring out what works for you.)
Easy Spaghetti Casserole
Prep Time: 15 minutes
Bake Time: 20 minutes
Yield: 8 servings
This is one of my favorite quick and easy dinner recipes. You can make it in minutes and everyone loves it. I am a big fan of easy casserole recipes because they are simple to make, satisfying to eat and my family loves them.
Ingredients
1 tablespoon olive oil
1 pound lean ground beef
1/2 cup chopped onion
1 clove garlic, peeled and cut into slices
1 can cream of mushroom soup
2 cups tomato based spaghetti sauce
1 cup shredded sharp Cheddar cheese
4 cups cooked spaghetti
2 tablespoons shredded or grated Parmesan cheese
Directions
1. Preheat the oven to 400 F.
2. Place a large skillet over medium-high heat and add the olive oil. Crumble in the ground beef and add the onion and garlic. Break up the ground beef and stir until the beef is brown all over and cooked through, about 5 minutes.
3. Remove from the heat and place the cooked beef in a large mixing bowl. Add the mushroom soup, spaghetti sauce, 1/2 cup of the Cheddar cheese, the cooked spaghetti and 1/2 cup water. Stir until everything is well mixed.
4. Transfer the spaghetti mixture to a 9×13-inch glass or ceramic baking dish and spread it out evenly in the dish. Sprinkle with the remaining Cheddar cheese and Parmesan cheese.
5. Bake until the casserole is bubbling and the cheese has melted, about 20 minutes.
Simple Inside Out Stuffed Pepper Skillet
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings
This is a great easy fast dinner recipe, perfect when you have some leftover rice in the fridge. It's perfect for those nights when everybody's hungry and you need to get dinner on the table fast.
Ingredients
1 pound lean ground beef
1 cup chopped onion
1 green bell pepper, chopped
1 1/2 cups cooked rice
1 can (8 ounces) tomato sauce

Block parties are a phenomenal way to celebrate summer with family and friends. With the rising cost of gas and travel many people are staying home for vacations ("staycations") and throwing a block party is a great way to get together and celebrate without traveling way. We have some easy dinner recipes to help create your feast and some ideas to make it happen.
1) Get everyone involved early. Notify people in advance of the event by putting save the date invitations in their mailboxes, then follow up in person so they know they are welcome.
2) Divvy up the tasks to make life easier. Have every family bring their own meat to grill, and assign most people to bring a dish to share. Those not bringing a dish can bring buns, condiments, desserts, ice and beverages. Get a headcount early so people know how much to bring.
3) Ask everyone to bring their own plates so there isn't a huge amount of waste at the end of the party and you can be green.
4) Put out sunscreen and bug spray to keep burns and pesky bugs at bay.
5) Assign someone to bring tables and folding chairs, but suggest to guests that they bring lawn chairs too.
6) Stock up on disposable cups.
7) Bring squirt guns, frisbees, balls, hula hoops and other games for the kids to all share.
8) Bring a CD player and some music to set the mood.
9) Have a watermelon eating contest and give out amazing prizes.
10) After dark you can project a movie against the side of someones house and all gather around to watch. Make popcorn to share.
11) Think about making homemade ice cream. Nothing puts people in a better mood faster. The young ones may have never seen it made and the older ones can share great memories of homemade ice cream from their youth.
12) Assign, or hire some teens to help out with the young ones. Make sure no one gets trampled and everyone has a good time.
Some easy dinner recipes to add to your party:
New Oreleans Flank Steak
This recipe multiplies easily to fit a crowd!
Serves 4
Ingredients
2 Tb Red wine vinegar
2 Tsp Light brown sugar
2 Tsp Creole or Cajun Seasoning
2 Tsp Terriyaki Sauce - reduced sodium
1 Tsp Oregano - dried
1/4 Tsp Salt
1/4 Tsp Cracked black pepper
1 1/4 lb Flank steak
Instructions
In a large zip top plastic bag, combine all the ingredients except the steak. Seal the bag to shake to combine the ingredients well. Add the flank steak, seal and shake bag again to coat steak well with marinade.
Refrigerate up to 3 days.
Preheat broiler, or grill, and grill the steak for 5 to 7 minutes per side for medium or cook to your desired doneness. Let the steak stand 10 minutes before slicing crosswise into 1/2 inch thick slices.
Honey Mustard Chicken
Simple but delicious. Kids will enjoy it a lot. Use broiler if grill is not available.
Serves 6
Ingredients
5 Tb Honey
5 Tb Dijon mustard
4 1/2 lb Chicken thighs and drumsticks
Instructions
Mix honey and mustard together in a small bowl. Put chicken in resealable plastic bag or plastic dish with lid, and pour or brush marinade over chicken. Make sure chicken is covered with marinade. Marinate in refrigerator for at least one hour, but not more than 24 hours. It's best to marinate overnight.
Grill the chicken on a preheated grill for about 8 to 9 minutes per side, baste chicken with marinade until chicken is cooked through and lightly browned. Serve chicken warm or cold.
Chipotle Mashed Potatoes
Chipotle chilies, lime, and cilantro transform everyday mashed potatoes into a mouth watering experience. Prep time is 2 minutes, and cook time is 8 minutes.
Serves 4
Ingredients
1 C Milk
2 3/4 C Mashed potatoes - frozen
1 Can Chipotles en adobo, minced
1/4 C Cilantro, chopped
1 Tb Lime juice - fresh
1/4 Tsp Salt
1/4 Tsp Black pepper, freshly ground
Instructions
In a medium saucepan, heat milk over medium heat. Add frozen potatoes; cook, stirring occasionally, for 5 minutes or until thoroughly heated. Remove from heat; add chilies and the rest of the ingredients. Stir until well combined.
Easy Three Bean Salad
Great accompaniment to any meal. Will stay in the refrigerator for up to one week in a tight lidded container.
Serves 8
Ingredients
1 Can Kidney beans - 15 oz, rinsed and drained
1 Can Black beans - 15 oz, drained and rinsed
1 Can Chickpeas - 15 oz, drained and rinsed
1/2 C Parsley - fresh, chopped
1/4 C Olive oil
1/4 C Balsamic vinegar
Instructions
Combine all ingredients and toss. Cover and chill.

I ask because I noticed something interesting the other day when I did a Google search for a quick and easy recipe for dinner this past weekend. The thing about that search that struck me as funny was the fact that all I had to search for was quick and easy, I did not have to mention what was quick and easy that I was looking for. No mention of dinner, appetizers, meals or another one hundred ways to cook a chicken nothing no mention of food what so ever.
I suppose it struck me as funny because I could think of quite a few things that I would look for that were quick and easy and none of them involve food. Yet when I tried to search just on quick and easy for all three major search engines they all assumed that I was looking for quick and easy recipes. Yes it's true that quick and easy recipes is exactly what I was looking for and for the most part they all gave basically the same food sites to find quick and easy recipes.
Just got me thinking how often people around the world must be looking for quick and easy recipes that all I have to type now is quick and easy. I did find a delicious recipe for a chicken and pasta dinner with diced red peppers and yes it was quick and easy! This also got me to thinking about how the concept of spending a decent amount of time to cook a good meal with more than five ingredients has become a lost art form really. Some of the most popular cooking shows on the Food Network for example are all about limiting your ingredients and preparing your meals in thirty minutes or less.
I reflect on the cooking habits that go on in our house and I would have to say that the only time we spend more than a half hour on any meal usually means we are cooking a holiday feast. Other wise I suppose we are like everyone else looking for short cuts to making our meals. This led me to another thought about all these quick and easy meals that perhaps all this short cut cooking that we all do and cutting back on ingredients is part of the reason so many people are fighting obesity and poor health. Not to say that quick and easy recipes are not healthy but that maybe they are missing some of the key ingredients and nutrients that we used to get in our daily nutrition but are now being shorted in the interest of saving time and money.
