Top 10 Fast Healthy Meals for Endurance Athletes

There comes a time in the life of a busy multi-sport athlete (and especially the longer, time-crunched, endurance athlete) when you must eat, it must be a complete meal, and it must be quick.
You see, your body can only support high volume training, proper performance, and immune system health for a limited period of time if all your quick meals consist of microwaved Lean Cuisines, gas station trail mix, and even "all-organic" food bars. You'll eventually crash. So you have to make a habit of regularly eating fast healthy meals and wholesome foods without heavy amounts of preservatives, salts, sweeteners, and synthetic chemicals, and you have to figure out how to do it without huge sacrifices of time and preparation.
On that note, I'm going to share with you my top ten meals that I rely on in a pinch. That is, when I've finished a long ride and have to be at work in 10 minutes, when I've gotten home from the gym and need to be asleep within an hour, or when I have just a few moments to make a dish to fuel a workout.
Each meal includes a complete blend of protein and carbohydrate for recovery and energy needs, and while none of these fast healthy meals are as tasty as filet mignon, lobster ravioli, or a fully-loaded chopped vegetable salad, they will fulfill the physiological needs of the busy multi-sport athlete. And since many endurance athletes must consume in excess of 5000 calories per day, here is the added bonus: these are relatively cheap eats with ingredients that are budget-friendly.
In no particular order, here are the top 10 meals that I personally make and have committed to memory as my complete fall-back nutritional options. Hell, some of them don't even have a name, so I had to make up a title on the fly while writing this article. And if you're wondering how you can ask me questions about these meals, see the snippet at the end of this article, along with a bonus Paleo meal.
10. Mediterranean Surprise: use some whole wheat noodles, quinoa noodles, orzo style pasta, rice or really, whatever. I pretty much grab whatever type of pasta is in the pantry for this one. Prepare the pasta. When it is finished, stir in a small handful of feta cheese, a tablespoon of extra virgin olive oil, a handful of raisins, a handful of almonds, and parsley/salt/pepper to taste. As a tasty bonus, you can throw some capers and garlic in. You can make a bunch of this and eat it all week, and if you're making it right after a workout, you can take your shower while the pasta cooks.
9. Turkey/Avocado Grilled Sandwich. Quick, fire up a pan drizzled with olive oil or butter. Put the bread on the pan and put the turkey on the bread. While all that grills to a nice toasty texture, slice one avocado and have it ready to slap on the sandwich and pack away or eat immediately. I also include sliced tomatoes and alfalfa sprouts on this one.
8. Soup. I call it soup. My wife calls it heated up vegetables with water on top. Whatever. Put a handful of broccoli, cauliflower, carrots, and spinach into a pot. For protein, also included cubed tofu (easy to find at grocery store produce section). Pour 1/2 cup water over the vegetables and tofu, and then heat for 8-10 minutes. Stir in salt, pepper, a bit of chicken bullion if you desire, then eat with a spoon straight out of the pot. Or pour it in a bowl if you have time to kill.
7. Dinner Burrito. Just because everyone else calls it a breakfast burrito shall I deem this a dinner burrito. Scramble 2 eggs with 2 tablespoons yogurt or cottage cheese, 1 handful spinach and 1 chopped tomato. Salt and pepper to taste, and then shovel onto a whole wheat tortilla. Sprinkle with cheddar cheese and consume.
6. Zucchini Pancakes. In a blender or food processor, blend 1 chopped zucchini, a handful of sliced red onion, a handful of whole wheat pancake mix, 1 egg, 1 tablespoon olive oil, and 1 handful parmesan cheese. Pour this mixture onto a grill and make pancakes with it (duh, pour it in a pan and grill 4-5 minutes/side). Season with ketchup. Organic ketchup.
5. Tapas. Lovely little appetizers all put together make a complete meal. I slice 1 tomato and drizzle with olive oil, sea salt, and parsley. I slice one pear or apple and sprinkle with gorgonzola cheese (or any cheese, really). I cover one handful of walnuts with honey and cinnamon. I eat it all, nicely arranged on a plate, or napkin.
4. Big Chef Salad. While 1-2 eggs are boiling, mix onto a bowl or plate two handfuls mixed greens, 2 sliced vegetables of choice, 1 handful raisins, 1 handful walnuts, and a small drizzling of olive oil and vinaigrette. Slice the egg and throw it on top, then salt and pepper to taste. If you need more carbs, crumble whole grain crackers for croutons.
3. Mexican Delight. It's like the Mediterranean Surprise, but a delight is somewhat different than a surpriseŠright? Use quick 10 minute brown rice. Just as it is finishing stir in black beans, salt, pepper, and any other creative items from the fridge such as olives or leftover salsa. If I'm not showering while the rice is cooking, I throw 1 chicken breast into a pan, and sprinkle with curry or turmeric (which I guess makes it an Indian Delight) and add that as well. Yum?
2. Power Oatmeal. My favorite, bar none. To one bowl of raw oats, I add 1 tablespoon almond butter, 1 tablespoon yogurt or coconut milk, 1 sliced banana, 1 egg and 1 sprinkling of cinnamon. Also 1-2 scoops whey protein powder if it's handy. Pour boiling water on top and microwave on high for 60 seconds, or just mix everything together on the stovetop. Warning: very calorically dense and should be consumed 2 hours prior to or immediately after a workout.
1. Reese's Peanut Butter Cup. My signature dessert. Use a small half bowl of plain, fat-free yogurt or coconut milk. Add 1 tablespoon peanut or almond butter and 1 tablespoon dark chocolate pieces or cocoa mix. Close your eyes and imagine you just took it out of that little orange wrapper. For added calories, add 1-2 scoops of protein powder (will make it a very "mousey" texture).
Disclaimer: your spouse and children may not share any affinity for these meals.
BONUS PALEO MEAL: If you're one of those caveman style Paleo folks, then try this in-a-pinch Paleo meal: grab any meat you can get your hands on, like a chicken breast, slab of grass-fed beef, or fillet o' fish, throw it onto a bed on spinach, and drench the whole mixture in olive oil, balsamic vinegrette, salt, pepper, and if desired, a bunch of chopped sweet potatoes or yams that you let cook while you were working out.

My Round Convection Oven is an essential item in my kitchen. I couldn't imagine cooking without one. I use it nearly every day and on a weekend I often use it for breakfast, lunch and dinner.
It's so easy to use for making an easy breakfast, a quick lunch and a full dinner without fuss or bother.
Three years ago I won a Round Convection Oven in a Christmas Raffle. At the time I had no real idea what to use it for as I had only seen some TV commercials for them.
That was one of the luckiest wins of my life. It has saved me so much time. As a single mother, I would start our dinner cooking, then help my son with his homework and realise how much time had passed and have to run out to the kitchen to find dinner was overcooked or even burnt.
Since I won my Countertop Convection Oven I haven't had a burnt dinner. The oven comes with a timer that turns off when it's done. I can set the timer and the oven temperature and walk away knowing that when I hear that ding, dinner is ready to be served.
Meat cooked in the oven is moist and delicious. Vegetables can be steamed, broiled and baked depending on how you want to cook them. Cakes and muffins can be cooked also in the oven. In fact, in the years I've been using it, I've found out just about anything you can put in an oven can be cooked in it.
The oven comes with 2 trays so you can cook your meat on one tray whilst cooking your vegetables on the second tray. You also usually receive an extender ring that can be placed on the glass bowl to allow you to cook larger roasts without hassle. You also receive tongs that allow you to easily and safely lift out the trays when the meal is finished cooking.
It's all possible because the Round Convection Oven is just so easy to use. I will always have one of these in my kitchen.
In fact, as I have an older house with dodgy electrics, I've blown up 3 of them. Each time I head to the local shop and replace it as soon as possible. The electrics will cost $1000's to fix, the oven costs me less then $50. The one time I had to wait and use my conventional oven, you guessed it, I burnt my dinner.
I have adapted many recipes to cook in my oven and I love experimenting with what I can do.

While they are getting tasty in the oven, prepare a nice salad using bagged lettuce and some tomatoes and cucumbers and put one of those steam-in-the-bag bags of broccoli or green beans in the microwave and season them with some butter and salt and pepper.
In half an hour, you have a delicious, quick, easy chicken recipe that the whole family can enjoy around the table.

Looking for ways to make dinner that are quick and easy and don't require another trip to the store? Here are 3 easy and kid-friendly recipes!
1) Chicken and noodles: Time to make: 15 minutes Need: Chicken, Prego, noodles, oil, flour/breadcrumbs.
Make spaghetti noodles, drain and set aside. You can warm these up by running under hot water for just a minute.
Cut chicken breasts in half lengthwise. Dredge (coat) the breast pieces with breadcrumbs. If you don't have these, use flour, but add some oregano or Italian spices to the flour first.
Heat olive oil (or canola) in a pan and add the chicken pieces. Cook for about 4 min on each side. Cut to be sure they are cooked through.
Warm noodles if needed, and place on large platter. Add chicken on top. Use Prego (or other canned sauce) to top off the dish. Sprinkle with parmesan and serve.
2) Chicken with Salsa. NOT SPICY! Time to make 20 minutes. Need: Chicken, Salsa (you pick the spice level), onion, green pepper, rice.
Chop onion and green pepper. Cut chicken into small, bite-sized pieces.
Heat pan over medium heat. Add onion, pepper, 1 cup salsa, 1 cup water, 1 cup minute rice and chicken.
Let simmer for about 10-15 minutes until water is absorbed and chicken is cooked.
3) Pasta. Yes, but add veggies and spices and make it taste like a new dish! Time: 20 minutes. Need: Hamburger meat or chicken, Veggies (whatever you have, onion, peppers, squash, tomatoes, etc), spices (Italian, oregano, basil), Prego/Ragu, Noodles.
Chop veggies and meat (if chicken).
Brown your meat in a pan and drain oil off.
Add, Prego, veggies and about ½ t - 1t of spices ( I love a little extra basil!).
Let simmer while noodles cook. If sauce gets too dry just add a little water.
Cook noodles, drain and serve with your new sauce!
Top with parsley leaves (dry is fine) or grated cheese.

Dinner time can often mean getting home late, looking in the fridge, seeing not a single eatable thing, and heading out for dinner instead. Although once a week this isn't a big deal, nightly starts to get a bit expensive and unhealthy. And then when being unhealthy costs you even more money, you really have to start asking yourself what you're doing. The nice thing is, that with a little planning and a trip to the grocery store, you can avoid all of this.
I want to challenge you to have meals planned ahead of time and groceries ready and waiting to make those meals. It could take you the same time as driving to the fast food joint, taste better, help you feel better, and move you to movie star status with your spouse or children. First lets look at some meal ideas.
Pasta is a great way to make something quick and really delicious. I like to recommend veggie noodles due to the extra serving of vegetables you get. Now you can really do whatever you feel like with the pasta. You can use chicken, seafood, or just veggies. You can add cheese or not. You can make a creamy sauce with a little cream or not. It's all really up to you. I like to do a little butter, a minced clove of garlic, zucchini, shrimp, and some tomatoes and Parmesan at the very end. Its fresh, so good, and super fast. I'm going to make a wager that even your picky eaters might enjoy the veggies.
Another really easy evening meal is Mexican food. With a little ground beef (browned), a can of chili beans, and some chili powder or taco seasoning, you can make a few different dishes. You can use this meat with salad, sour cream, avocado, and cheese for an awesome Mexican salad. Or you can make soft tacos or nachos. You could even make a beef quesadilla. If you add a can of diced tomatoes, a bit more chili powder and a dash of cloves you could have a nice bowl of chili. All of these meals will please the taste buds, and any leftovers can be frozen for a rainy day.
It wouldn't be a good "easy dinner list" without at least one crock pot idea, so here it is! If you need an easy chicken meal or two, this one is sure to please and is really flexible to what you want. First place some raw chicken breasts in the bottom of your slow cooker. Season with some salt and pepper as a minimum. I like to add onion powder, chili powder, cumin, and/or some taco seasoning. Next dump a can of black beans (drained), a can of corn (drained), and a jar of salsa. Put on low for 7 to 8 hours. When you get home, simply shred the chicken and enjoy as tacos, nachos, enchiladas, a salad, or as is. If you want a more soup-like consistency, add a cup of chicken broth in the morning. You will end up with a tortilla soup.
If you want a more plain shredded chicken, just cook the chicken in 2 1/2 cups of chicken broth. Season well. With that, you could then add barbeque sauce and pinto beans. Or you could serve it with lemon pepper, veggies, and rice. Or perhaps you want to add some buffalo style sauce and serve with carrots and celery. With a plain base, the shredded chicken can really become whatever you want it to be.
Hopefully you've gained a few ideas for your dinner process. I highly recommend creating a menu on the weekend and doing all of your shopping. Then when a busy week hits you are prepared and you have a plan. I know you'll feel better and you might even drop a few pounds! Good luck and happy eating.

Quick and easy dinner ideas are great when you live a busy lifestyle and need a plan of action to get meals completed. All you need to do is take some time out to do some planning ahead with buying all the ingredients you need that will allow you to quickly adapt to any rush situation during dinner time. The following ideas are a great baseline to get you started.
Pasta is always and easy foundation for any meal. You can always stir fry vegetables with pasta and add your favorite cheeses. You can make your own sauce or you can buy ready made sauce from the store. Linguine, spaghetti and bow tie pasta are all examples of different pastas that go great with Alfredo sauce or even spaghetti sauce. You can also add your favorite meat such as, ground beef, grilled chicken or even seafood. This is actually a complete and quick dinner meal.
Rotisserie chicken is always available at the local deli and is already prepared, cooked and ready to serve to the family. Add some salad greens from the market and you have an entire meal that is served with less the expense of a full meal at a restaurant.
Minute steaks are round steaks that are pounded thinner and can be seasoned and sautéed in olive oil or butter. You can add vegetables, bread and a salad. A baked potato can quickly be placed in the microwave to complete your meal.
Many quick and easy dinner ideas include chicken breasts. Chicken can be cooked and sautéed in olive oil and you can also add a can of cream of mushroom soup for flavor and gravy.
Casseroles are great and can be prepared in minutes. For example, the green bean casserole includes a can of green beans, cream of mushroom soup and also french fried onions. The mixture is baked for about 30 minutes.
I like to make a quick chicken salad to stuff in pita bread for a fast dinner. I always keep shredded chicken in my freezer for this but you can also use canned chicken, Add a diced tomato, a little poultry seasoning, some mayo and a diced onion. We top ours with Monterey Jack cheese. This makes a quick meal when you have to get the kids to soccer practice or have somewhere else to go right after dinner.
Quick and easy dinner ideas are very simple when you have on hand the right type of food ingredients. Being prepared will come in handy when you have a quick dinner to make.
