
What do you do when it is 5:00, you have nothing defrosted, and you are too tired to even think about dinner? If you are like most people, you load the family up and head out for dinner or pick up the phone for take-out. With a simple back up plan in place, you can have dinner on the table faster than take-out can get to your house.
What you need is a list of emergency meals and the necessary ingredients on hand. What is an emergency meal? The first requisite for an emergency meal is that it must consist of things you can keep in your pantry and freezer that will not go bad if left for a while. It must also have a preparation time of 30 minutes, frozen to table. And it can not use more than 5 ingredients.
In the event, nothing has been defrosted, remember this. You can boil frozen chicken and you can brown frozen ground beef. Pair either of these two things with a few pantry staples and "Voila."
Some of my favorite emergency meals include: Chicken Quesadillas, Soft Tacos, Chicken Salad Wraps, Spaghetti, and Baked Ravioli. These recipes are quick, easy, and delicious and they meet all of the emergency meal requirements.
With the following things in your stockpile, you can make any of the above dishes. In your freezer, keep 3 chicken breasts, a 1 lb package of ground beef and a bag of frozen ravioli. In your refrigerator, keep a block of cheddar on hand and a package of flour tortillas. Tortillas last a really long time in the fridge and the possibilities are endless. In your pantry, keep a jar of spaghetti sauce, a package of spaghetti noodles, and a package of taco seasoning. When you use the ingredients from your stash, be sure to add them to your current grocery list right away. With this simple system in place, you will never get caught without a dinner plan again.
Simple Chicken Quesadillas: Boil and shred chicken breasts. Butter the outside of 2 tortillas. Place shredded chicken and shredded cheddar in between tortillas. In a skillet or griddle, cook buttered sides (like a grilled cheese) over low heat until golden brown and flip. Serve with sour cream and salsa.
Soft Tacos: Brown ground beef. Add taco seasoning and water according to directions. Serve in flour tortillas with shredded cheddar cheese, sour cream and salsa.
Chicken Salad Wraps: Boil and shred chicken breasts. Add 1/4 cup of mayonnaise, 1/8 cup of chopped dill pickles or relish, and salt and pepper to taste. Serve in flour tortillas.
Spaghetti: Brown and drain ground beef. Add 1 jar of spaghetti sauce to beef. Serve over cooked noodles.
Baked Ravioli: Pour 1/3 jar of spaghetti sauce in a large baking dish. Pour in frozen ravioli. Cover with remaining spaghetti sauce. Bake at 400 degrees for 30 minutes topping with mozzarella cheese and grated parmesan cheese (optional.)
Remember an emergency meal is never more than 30 minutes and a few ingredients away.
